On a sunny and freezing monday morning Pietro introduced us to the art of butchery. We followed the lines of muscles and tissues with our fingers and respectfully took apart bones and meat of a doe roe deer that Henrik brought us. To know what we eat and to honor it is such a privilege. This dinner was born out of the beauty of that morning, where our 10 working hands moved together almost in silence; discovering, touching, respecting the produce. 

We want to invite you to a gathering where the wholeness of an animal is celebrated and transformed into a menu that embraces the beauty of the season and what it offers. 

The ingredients will not only come from the forest, but from the fields too. Transitioning from autumn into winter, pumpkins, radicchios, grains from amazing producers inspires us these days. Expect some warm, wintery, heartwarming food filling up the long tables and your bellies too.
